Handlebar is a 44. I can put in an Sette Anatomic 42 there if you want. Bottle cages - I was going to pull these and put them on the other bike. I can toss in a different pair for the price or include these at cost, if you want.
Crank - nope, cannot change, unfortunately. The compact double is what I have. 50/11 is more gearing than you'll ever need: if you spin out 50/11, you should be in an aero tuck instead :)
With your stated inseam, the bike should fit very well. You may need a longer stem, actually - I have a 90mm on it. See how it goes but you may want to swap it out for a longer stem.

5'10" to 6'0" should be the correct fit for this bike. It is a M. I am on the taller end of the range for a 56 (I should be on a 57-58 as per most fit calculators) but I fit b/c I like a very aggressive fit (5" saddle to handlebar drop).
So I dont see any reason why it wouldnt fit you. What is your inseam?
I got the Ridley in April this year and started riding it in May. Have about 4000km on it, all on very smooth Middle Eastern roads. No crashes, no falls, no impact :)

I'd pick SRAM over Ultegra. Functionally, all the SRAM stuff works the same - the only difference is in weight (and Rival doesnt have zero loss shifting for the rear, something you only notice if you try Force or Red) and Rival is lighter than Ultegra.
Full bike weighs around 7kg or so. Frame is 1100gm.
No, am not selling the 40mm carbon wheels - I can include them, if need be, but it will be extra (Rs 40k or so). Am selling it with a pair of Planet X wheels (1600gm).
